Description
Makki di Roti is an usual Indian flatbread made from maize flour (cornmeal). It is very popular in Punjab and regularly paired with Sarson da Saag (mustard greens curry). This golden, rustic bread has an a little rough texture and an earthy flavour, making it popular in North Indian cooking. Warm water can be utilised to create the dough, with just a little of ghee or butter included for taste. Fresh herbs such as coriander, green chillies, or grated radish can be added for more flavour. Makki di Roti, unlike wheat-based rotis, is much more difficult to roll out due to the lack of gluten, hence it is frequently patted into shape by hand. Cooked on a hot griddle (tava) and finished with a generous dollop of butter or ghee, this wholesome roti is best enjoyed with pickles, jaggery, and a glass of lassi, making it a comforting and nutritious meal.
